Description

Yummy rice like they serve at Cafe Rio.

Ingredients

  • 1 cup Uncooked Rice
  • 1 teaspoon Butter
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Fresh Lime Juice Plus 1 Teaspoon, Divided
  • 1 can (15 Oz. Can) Chicken Broth
  • 1 cup Water
  • 3 Tablespoons Fresh Chopped Cilantro
  • 2 teaspoons Sugar

Preparation

Combine rice, butter, garlic, 1 teaspoon lime juice, chicken broth and water in a saucepan or rice cooker. Cook for 15-20 minutes until rice is tender.

In a small bowl, combine remaining 1 tablespoon lime juice, sugar, and cilantro. Pour over the hot cooked rice and mix in as you fluff the rice.

Love this rice! I’ve made it several times in the rice cooker. I put all the ingredients into the rice cooker and just set it on “white rice” and it came out perfectly. I didn’t add sugar and it tasted just fine. This goes really well with any Mexican-type dish.

This was a super easy, yummy addition to our soft taco dinner. The kids loved it as it is mild. I would have loved to have a little bit more flavor, but the recipe is a great base to play with. Thanks for sharing!
