Description

My recreation of the rice made at Chipotle, the gourmet burrito place.

Ingredients

  • 2 cups Water
  • 1 cup Long Grain White Rice
  • 2 whole Handfuls Fresh Cilantro
  • 1 whole Lime, Juiced
  • 1 whole Jalapeno, Seeded, Rough Chopped
  • 2 teaspoons Salt, More Or Less For Taste

Preparation

Bring water to a boil, add rice and simmer until all the water is absorbed. Meanwhile, in a food processor, process cilantro, lime juice, jalapeno and salt until finely minced. Cool cooked rice to room temperature, add cilantro mixture and toss until rice is completely coated.

This rice is not only a great addition to burritos, it’s also a great substitute for Spanish rice when served with beans alongside fajitas or enchiladas.

This rice is amazing! I’ve made it a few times & my husband now request it. Last night we used it as a bass to make a “rice bowl” like they do at Chipotle. Delicious!

I made this as a side dish to beef and bean chimichangas this weekend… and it was a HUGE hit. EVERYONE (company and even the kiddos loved it.) I made a double batch and doubled everything except the lime juice. It was phenominal, I will make this again soon. Thanks!

this rice was terrific and very easy to make. I made it a day ahead and reheated it in the microwave, and it was still delicious.

I just made this to go with chimichangas I and was very happy with how it turned out! I didn’t have a jalepeno on hand but this was still great. Thank you!

Awesome dish! I was craving burritos and had to have some rice so I thought I would try this. It was a huge hit. I will definitely be making this on a regular basis. Thanks for a great recipe!

This is really great. I put half of the lime juice in my rice cooker, along with the rice, water and 2 teaspoons of chicken bouillon granules. It came out great! I also added a couple tablespoons of butter to the hot rice when I added the cilantro and the rest of the lime juice. This is my go to recipe.

I LOVED this rice. I think there was a bit too much lime/cilantro flavor for my husband’s taste. We made this into Chipotle style burritos with grilled chicken, black beans, and monterey jack cheese. Delicious!
