Description

This rice with its fragrant hint of lime and cilantro makes a fine side dish for Mexican food as well as other dishes.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 2 cloves Garlic, Minced
  • 1 cup Basmati Rice, Uncooked
  • 1-½ cup Chicken Stock
  • 1 Tablespoon Salt
  • 2 whole Limes, Juiced
  • 1 whole Limed Zested
  • ½ cups Fresh Cilantro, Chopped

Preparation

Add the oil to a sauce pan and heat on low. Add the garlic and rice to the oil and saute for 2 minutes on medium heat, stirring frequently.

Add the chicken broth, salt, lime juice and bring to a boil. Cover and cook on low for 15 minutes or according to rice package directions.

When the rice is done, add lime zest and chopped cilantro. Stir to mix in. Serve immediately.

If you are using regular long grain rice, follow the cooking directions on the box regarding the amount of liquid to use and the cooking time.

This stuff is fantastic! I found a recipe very similar to this (a ripoff of Chipotle’s rice!), and made it to put in fajitas. It was a real crowd pleaser! Thanks for posting!

Found this to be WAY too salty & too much lime for what I was looking for. My kids & I tried one bite each and that was it; no one wanted any more. Sorry but it just didn’t taste good to us.

This recipe is great! It is yummy, well balanced and simple to make.
I’ve made it a few times now and it goes great with a variety of meals.
