Description

My favorite (and really easy) roasted vegetables. Carrots, broccoli, green bell peppers, and zucchini roasted with chili powder, garlic powder, salt and pepper.

Ingredients

  • 2  Medium Zucchini, Diced
  • 1 head Broccoli, Florets Chopped Off From Stalk
  • 2  Large Carrots, Peeled And Sliced
  • 1  Green Bell Pepper, Sliced Into Thin Strips
  • 3 Tablespoons Olive Oil
  • ½ teaspoons Kosher Salt (adjust To Your Desired Level Of Saltiness)
  • ½ teaspoons Freshly Ground Black Pepper
  • ¾ teaspoons Chili Powder
  • ½ teaspoons Garlic Powder

Preparation

1. Line 2 large baking sheets with foil and preheat oven to 425°F.
2. In a large bowl, toss the vegetables with olive oil, salt, pepper, chili powder, and garlic powder.
3. Spread the vegetables evenly out onto the baking sheets and bake 30-40 minutes, stirring once at 15 minutes.
