Description

A healthy and delicious side to accompany any meal!

Ingredients

  • 2 whole Large Zucchini
  • ¼ cups Melted Butter
  • 1 Tablespoon Oregano
  • 1 teaspoon Basil
  • ¾ Tablespoons Garlic Powder
  • ½ cups Parmesan Cheese

Preparation

Preheat oven to 375 F.

Cut ends of zucchini off and cut zucchini in half. Taking one half of a zucchini vertically, cut it into thin slices. Repeat with remaining zucchini. Lay zucchini side by side on a greased baking sheet.

Melt butter and add spices. Add more or less spices to taste. Using a basting brush, spread butter mixture liberally over zucchini. If needed, melt more butter and add more spices.

Next, sprinkle Parmesan cheese over zucchini (you can use real or the good old Kraft Parmesan in a can). Bake for about 12 minutes until edges are slightly brown.

I love this recipe and haven’t changed a thing except I also added some kosher salt at the end! Thanks for sharing!

Overall I thought this was a good side dish. Mine never really got brown and bordered on getting a little too soft. The flavor was spot on!

I made mine a little crispier and sprinkled a little kosher salt over it at the end – very good!
