Description

Low-carb ‘rice’ made with cauliflower.

Ingredients

  • 1  Large Head Cauliflower
  • ½  Medium Onion
  • 2 cloves Garlic
  • 2 Tablespoons Coconut Oil
  • ½ teaspoons Celtic Sea Salt
  • ½ teaspoons Cumin
  • 1 dash Paprika
  • 1 dash Cayenne
  • 2 dashes Ground Pepper

Preparation

Wash and trim the cauliflower. Chop it coarsely into chunks and place in a food processor. Pulse until cauliflower is about the size of rice.

Dice the onion finely and mince the garlic.

In a large skillet, heat up coconut oil over medium heat. When oil is hot, saute onions until translucent, about 5 minutes. Add garlic and saute one more minute. Stir in cauliflower. Sprinkle in the spices and seasoning and continue to cook for about 8-10 minutes until cauliflower is soft.

Serve!

I’m not sure what I was expecting, but it wasn’t what I got. I personally love cauliflower, so I liked this ok. My family…not so much. It’s exactly what the title says-cauliflower rice. It’s a very dry, crumbly cauliflower dish, with a seasoned cauliflower flavor. Not bad, but probably not something I’ll make again.
