Description

A simple new twist on a classic coleslaw.

Ingredients

  • 5 whole Carrots, Carrots, Trimmed, Outer Skin Peeled
  • 2 whole Ribs Of Celery, Cleaned
  • ½ cups Yellow Onion, Diced
  • ½ cups Cilantro, Roughly Chopped
  • 1-½ Tablespoon Olive Olive
  • 1-½ Tablespoon Cider Vinegar
  • ½ teaspoons Salt To Taste
  • ½ teaspoons Cracked Black Pepper, To Taste

Preparation

This is how simple this slaw is to make, and it still provides the same great texture you would find in a traditional slaw, just without the mayonnaise. I tossed the carrots in a food processor, breaking them down to the texture I wanted. If you want to use a box shredder, you could go that route as well. Same goes for the celery. Toss everything in a bowl, add in your olive oil and vinegar, season with salt and pepper, and your slaw is done. Taste and adjust any seasoning that you see fit.

I tried this mainly because I like light salads. I couldn’t find the attachment for my food processor to grate the carrots so I did them my hand on my mandolin. Let me tell you the work was worth it. I couldn’t stop eating it. And the next day, it was even better. You’ve all got to try this.
