Description

The nutty flavor of quinoa is brought out with these delicious carmelized onions and baby portobellas.

Ingredients

  • 1 cup Quinoa
  • 1 Tablespoon Olive Oil
  • 1 whole Small, Sweet Onion, Chopped
  • 1 cup Chopped Baby Portobella Mushrooms

Preparation

Heat a skillet on medium and add one tablespoon of olive oil. Add in chopped onions and mushrooms, occasionally stirring until carmelized, about 20 minutes.

Prepare quinoa according to instructions. When finished, add in carmelized onions and mushrooms.

Serve as a side or in salads, wraps, or pasta.

This was one of my first times preparing quinoa myself and it was good. I made the quinoa with chicken broth instead of water and then mixed in the mushrooms and onions. I do wish it had a little more flavor and next time I’ll probably add some herbs but overall it was a great and easy recipe.
