Description

Umm … embarrassingly, this farmer must admit to have never eaten Swiss Chard. She grows it for her city folk but sticks to collards in her own home.

It’s actually a collard recipe, adapted.

Ingredients

  • 3 slices Cooked Bacon, Chopped
  • 1 bunch Swiss Chard (large)
  • 3 cloves Garlic, Crushed
  • 6 Tablespoons Olive Oil, Divided
  • 1 cup Onion, (approx. 2 Small Onions Or 1/2 Med. Onion)
  • 1 can Bread Crumbs
  • ½ cups Parmesan Or Romano Cheese, (grated)

Preparation

1. Cook bacon. Blot grease from bacon, set bacon aside.

2. Chop Swiss chard (stems about ½ inch thick, leaves larger). Sauté garlic in 2 T. of oil. Add onion and sauté lightly.

3. Add Swiss chard stems, cook 3 minutes. Add leaves and cover. Cook 2 to 3 minutes.

4. Mix cooked ingredients approximately 2” deep in a baking dish. Sprinkle bread crumbs over mixture and mix in lightly with a fork. Drizzle with remainder of olive oil. Bake at 350 degrees for 15 min.

5. Sprinkle with grated cheese and return to oven until cheese is melted.

Ohmel you are so right! I’ve never used the full can. I sprinkle to my likings… I guess I should change that.

Please note a quantitative amount for the bread crumbs.

This was a tasty way to cook up some of the chard that is taking over my fridge. I used a mozz/parm blend for the topping and peppered bacon. I also cooked the onions/garlic in the bacon grease for added flavor.
