We usually have this as a side dish at my home. It’s a great side dish to any Mexican meal.
Wash all the veggies, dice the calabacitas, onion, tomato, and finely dice the jalapeno.
Heat the oil in a skillet on medium-high heat. Add the onion, tomato, jalapenos and cook for approximately 3 minutes. Add the calabacitas, oregano, salt and pepper to taste. Cook until tender, about 10–15 minutes.
