Description

Simple enough that you could serve it with steaks, yet jazzy enough to saddle up next to your turkey this Thanksgiving.

Ingredients

  • 3 pounds (smallish) Golden Potatoes
  • Olive Oil
  • 1-½ Tablespoon Cajun Seasoning (see My Recipe Box)
  • Kosher Salt To Taste
  • 2 Tablespoons Chopped Parsley

Preparation

Preheat an aluminum sheet pan in your oven to 350ºF.

Slice your potatoes in half on a diagonal and place in a large bowl. Drizzle with a good amount of olive oil and sprinkle with the Cajun seasoning. Toss and spread out onto the hot sheet pan. Place back into the oven for 60 minutes, tossing every twenty minutes.

Remove and sprinkle with a little kosher salt and let cool slightly. Toss the potatoes with chopped parsley and serve.

Note: For a spicier potato, sprinkle with a little extra cayenne pepper.
