Description

A delicious vegetable side dish with any beef, ham or poultry main course.

Ingredients

  • FOR THE BROCCOLI CAKES
  • 1 bunch Fresh Broccoli (rinsed And Trimmed)
  • 1 whole Large Egg, Beaten
  • 1 whole Yellow Onion, Diced Finely
  • 1 teaspoon Black Pepper
  • 1-¼ cup Panko Bread Crumbs
  • FOR THE CHEESE SAUCE:
  • 2 Tablespoons Sweet Cream Butter
  • 1-½ cup Shredded Sharp Cheddar Cheese
  • ¼ teaspoons Hot Sauce (your Favorite)

Preparation

Preheat oven to 400 F. Liberally spray a 9 x 12 baking sheet with your favorite cooking spray. Set aside.

Trim rinsed broccoli, cut it into spears and put them into the food processor. Pulse several times to break it up then run processor for a few minutes to really mince it. Remove broccoli to a large mixing bowl. Add beaten egg, onion, black pepper and panko and mix well. Form round patties from the broccoli mixture and place on baking sheet in a single layer. Put baking sheet in the oven and bake for 20 minutes, flipping them halfway through.

For the cheese sauce: In a saucepan over low heat, melt the butter. Then stir in the shredded cheddar cheese. Heat on low heat, stirring occasionally, until melted and creamy. Add hot sauce and mix to combine.

Serve broccoli cakes and drizzle cheese sauce on top. Enjoy!
