Description

Vegetarian deliciousness. The hint of tanginess throughout is what makes it.

Ingredients

  • ½ whole Onion, Diced Small
  • 1 Tablespoon Extra Virgin Olive Oil
  • ½ Tablespoons Butter
  • 1 pinch Salt
  • ½ cans (10 Oz. Size) Cream Of Celery Condensed Soup
  • ¼ cups Sour Cream
  • 3 Tablespoons Half-and-half
  • 1 Tablespoon Garlic Powder
  • 1-½ cup Sharp Cheddar Cheese
  • 2 Tablespoons Blue Cheese (mild, Creamy Works Best)
  • 1 Tablespoon Cracked Black Pepper
  • 32 ounces, weight Frozen Tater Tots

Preparation

Preheat oven to 350ºF.

Saute onion in olive oil and butter over medium heat until translucent. Add a sprinkle of salt at the beginning to sweat. Set aside to cool.

In a large bowl, mix sauteed onions, cream of celery soup, sour cream, half-and-half, garlic powder, about half of the cheddar cheese, blue cheese and pepper. Stir to combine. Add frozen tater tots to mixture and fold to coat the tots in the cheese mix.

Grease a baking dish (9×9 or 9×13 will work). Pour in tots and distribute evenly. Cover the top with the remaining 3/4 cup or so of cheddar cheese (or a smidge more if your heart desires).

Bake for 45-50 minutes until top is browned and tots are heated through.
