Description

Vegetarian Taco Filling that even a meat and potatoes guy will love. Loaded with onions, peppers, tomatoes and black beans with just the right amount of seasoning. This taco filling would make a great side dish, or a topping on pizza and salad.

Ingredients

  • 1 teaspoon Olive Oil
  • ¼ cups Onion, Diced
  • ½ cups Bell Pepper, Diced
  • 10 ounces, weight Can Rotel Diced Tomatoes With Chilis
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 15 ounces, weight Can Black Beans, Drained And Washed

Preparation

In a skillet add olive oil, onions and bell pepper. Cook until tender, about 3–5 minutes. Add tomatoes and seasonings, saute for 10 minutes. Add black beans and cook until warm.

Serve with tortillas.

Makes 8 1/2-cup servings.

This was amazing! I used green and orange peppers, sweet onion, and added some frozen corn and salt for flavoring. We ended up eating it nacho-style with tortilla chips. This would go great with any Mexican dish. Thanks for posting!
