This little recipe (or trick) makes corn live up to its full potential . . . Fresh corn, frozen corn, and even the corn that may not be quite in season yet. Something about the lactic acid doing something at the molecular level with the sugar in the kernels. I am talking JUICY, SWEET, make you want to eat it till you burst corn! Seriously, try it!
Fill a large pot half-full with water, making sure it’s enough water to cover the corn (don’t put the corn in yet). Do not salt the water! I repeat, salting the water draws out the moisture of the corn kernel and makes it bitter!
Add the milk, sugar, and butter. Bring to a boil, then add in corn cobs. Reduce heat to a simmer and allow to cook for 8-10 minutes, or just until tender. Try not to overcook it or it will become tough and have the appearance of the stuff you find in bird seed! Remove from water and serve with butter and salt to taste.
My immersion blender came with a small bowl and attachment that allows it to work like a food processor. I love it. It is great for small quantities such as this margarine rub for corn. I had a smidgeon of the mixture left over and used it on a grilled cheese sandwich. Yum!
When I made this dish I originally had a run-of-the-mill stewed lentil thing in mind. Then I just let my imagination run wild, grabbing whatever sounded good from my fridge and pantry. With ingredients like pomegranate molasses, cumin, smoked paprika, and fresh mint, it ended up tasting like a Middle Eastern version of baked beans. Savory, smoky, and complex-flavored with an underlying hint of sweetness, the sauce is killer.
