I love sweet potato, but this will work with any type of potato. The secret is in the “mashing.”
Peel sweet potato and chop in to small cubes. Place enough water in a small saucepan to cover the potato chunks. Bring water to a boil. Add sweet potato to the water and boil 15-20 minutes, until the potato is soft enough that a butter knife easily slices the pieces in half.
Remove pot from heat and drain potatoes. Return potatoes to heat and add salt, pepper and butter.
Using a small whisk, combine potato cubes, butter, salt and pepper. The potato should be soft enough that you can essentially whip them using the whisk.
Add anything you want to this! I’m a fan of garlic, rosemary, lemon pepper … anything!
