Warm sweet cinnamon pineapple, a great accompaniment to a ham dinner (or any dinner).
Mix the pineapple, sugar, cornstarch, eggs, and vanilla together. Pour into a greased casserole dish. (A 2-quart casserole or 8×8 pan works great.) Sprinkle with cinnamon and dot with butter. Bake without a lid at 350 degrees for 1 hour.

I made this as a side dish to go with some ham steaks. Its like pulling teeth to get my boyfriend to eat his veggies, so having a fruit side was the next best thing. I liked the flavor a lot and will make this again, however I expected it to be more custard-y than it was.
