Description

This rich, buttery corn casserole is a real treat.

Ingredients

  • 1 package (about 8.5 Oz. Package) Jiffy Cornbread Mix
  • 2 sticks Melted Butter
  • 8 ounces, weight Sour Cream
  • 1 can (15 Oz. Can) Creamed Corn
  • 1 can (15 Oz. Can) Whole Kernel Corn
  • 2 whole Eggs, Beaten
  • 1 Tablespoon Sugar

Preparation

Mix all ingredients together and spread in a 13×9 pan. Bake at 350F for about 45 minutes.

This is super rich, but it is a nice treat every once in a while. We like it at Thanksgiving!

I’ve made a version of this (less butter and half the corn) for over 25 years. We call it Cindy’s Corn Casserole after the old neighbor in Dublin, OH who gave us the recipe. My grown kids now make it for their friends at holidays.

This is a great dish. I have had this same recipe for years. I always make a double batch, because it goes so fast. You can make it with fresh corn cut from the cob.

I kind of eyeballed the recipe when cutting it in half, skipped the sugar, and then drizzled it with honey when it was hot out of the oven – yum! It reminded me a little of the corn mash side that they serve at Chevys? Random, I know, but the dish is hard to describe, almost like a really rich cornbread souffle. Thanks!

Definately rich and buttery! I am seriously addicted to this stuff so I don’t make it often (can we say “glutton” anyone?lol) It goes quickly at family gatherings also.
