Description

Baked black beans in a sweet and smoky sauce.

Ingredients

  • 6 slices Thick Cut Bacon, Cut Into Pieces
  • 1 whole Bell Pepper, Diced
  • 1 whole Yellow Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Salt
  • ½ teaspoons Black Pepper
  • 2 Tablespoons Brown Sugar
  • ¼ cups Apple Cider Vinegar
  • ½ cups Molasses
  • 2 cans (15 Oz. Size) Black Beans

Preparation

Preheat oven to 350ºF.

In a Dutch oven or large oven-safe pot, cook bacon over medium heat until it starts to brown. Add bell pepper, onion, and garlic. Cook vegetables until they soften, about 5 or so minutes. Add chili powder, dried oregano, ground mustard, salt, pepper, and brown sugar. Stir it all together and cook another 2 minutes.

Add apple cider vinegar, molasses, and black beans. Stir everything to combine and then add water until it just covers the beans (about a ½ cup depending on the size of your pot).

Transfer the pot, uncovered, to the preheated oven. Bake the beans for approximately 1 hour, or until the sauce has thickened.

We really enjoyed these as an alternative to my more traditional baked beans. Loved the black beans. The only thing I would do differently next time is reduce the chili powder by about half.
