Description

A healthy take on pancakes. Perfect as a side or main dish topped with sour cream.

Ingredients

  • 1 head Cauliflower, Cut Into Florets
  • 3 slices Bacon, Cooked And Chopped
  • 2 whole Large Eggs
  • ¾ cups Cheddar Cheese, Shredded
  • ½ cups Panko Bread Crumbs
  • ½ teaspoons Onion Powder
  • ¼ teaspoons Cayenne Pepper
  • ½ teaspoons Parsley Flakes
  • ½ teaspoons Salt

Preparation

Bring water to a boil in a pot. Add the cauliflower florets and let it cook for 15 minutes on medium/high heat. When cauliflower is nice and soft remove from pot and drain.

Add the florets to a large bowl and start to mash using a potato masher or hand mixer. Then add the rest of the ingredients and stir well so that everything is mixed up.

Heat a griddle or sauce pan up on medium/high heat. Using your hands, cup some mixture into your hands about a 1/2 cup to 3/4 cup and make into a ball. Then mash down slightly and place down on griddle. Cook 3-4 minutes on each side.

If the mixture has cracks from the first time putting it down before you flip, use your fingers to pinch it together and it will stay.

Serve right away or place in the refrigerator and reheat when ready to devour.

Tip: a great topping is sour cream.
