Description

I don’t know a single person who doesn’t love bacon.
Okay, well maybe the vegetarians and vegans out there. But outside of that group, the mere mention of bacon will make knees weak! A warm bacon dressing will transform any vegetable into something pretty darn close to heaven.

Ingredients

  • 1-¼ pound Asparagus, Woody Ends Trimmed
  • 2 Tablespoons Olive Oil
  • 1 whole Shallot, Minced
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 pinch Good Pinch Sea Salt
  • 3 slices Bacon

Preparation

1. Add the bacon to a frying pan and turn the heat to medium. Cook the bacon until crisp. Remove the bacon, reserving 1 tablespoon of the bacon drippings. Chop the bacon into fine pieces.

2. In a bowl, whisk together the minced shallot, red wine vinegar, and mustard. While whisking, slowly pour in the olive oil and the 1 tablespoon of the reserved bacon drippings.

3. Boil a pot of water large enough to cook the asparagus. When boiling, add asparagus and cook for 3 to 4 minutes, until just tender. Remove and place asparagus on a plate. Drizzle with some of the vinaigrette (to taste). Sprinkle with sea salt.

My aunt used to make a similar dressing, and served it over brussel sprouts! It made them taste divine – so I can only imagine how this would taste over asparagus! I am going to try this right away. Thanks, Jaden!

Tried this last night. I cooked my asparagus in some olive oil in the frying pan I cooked the bacon in. Really good!
