Asparagus & Fava Beans with Peach Vinaigrette

Description
A healthy way to welcome Spring.
Ingredients
- 8 stalks Asparagus, Tough Ends Removed
- 2 cups Fava Beans
- 1 Tablespoon Olive Oil
- 2 Tablespoons Peach Vinegar
- ¼ teaspoons Pepper
- ¼ teaspoons Salt
- ¼ cups Bread Crumbs
Preparation
Preheat oven to 425 F.
Combine asparagus with fava beans in a baking dish.
Add olive oil, peach vinegar, pepper and salt to the greens and mix to combine.
Sprinkle bread crumbs over the top to form a light breading.
Bake for 25-30 minutes, until tender.
