Description

Trust me on this one. If you love cilantro, your eyes will roll back in your head when you try this! It is so good, I will have to fix it now just because I thought of it!

Ingredients

  • 2 pounds Fresh Sweet Potatoes, Peeled And Cut Into Bite-sized Chunks
  • 3 Tablespoons Olive Oil, Divided
  • ¾ teaspoons Salt, Divided
  • ¼ teaspoons Cayenne Pepper
  • ½ teaspoons Lime Zest
  • ¼ cups Fresh Lime Juice
  • ¼ cups Chopped Fresh Cilantro

Preparation

1. Put oven rack in lower third of oven and preheat to 425 degrees.
2. Toss sweet potatoes with 2 tablespoons oil and ¼ teaspoon salt in a shallow baking pan. Arrange potatoes in 1 layer and roast, stirring halfway through, until tender, about 25 minutes.
3. Stir together cayenne, zest, and remaining salt in a small bowl. Whisk together lime juice and remaining oil in a medium bowl, then add potatoes. Sprinkle with cayenne mixture and cilantro, stirring gently to combine.
