Description

An uncanny mix of ingredients come together in this salad for a fresh burst of amazing flavor.

Ingredients

  • FOR THE DRESSING:
  • 4 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Champagne Vinegar (or Substitute)
  • 1 Tablespoon Water
  • 1 Tablespoon Honey
  • ½ teaspoons Dijon Mustard
  • 1 clove Garlic, Minced
  • ¼ teaspoons Herbes De Provence
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Pepper
  • FOR THE SALAD:
  • 8 cups Romaine Lettuce, Chopped
  • 4 cups Green Cabbage, Thinly Sliced
  • 8 ounces, weight Roasted Chicken Breast, Cooled And Chopped Or Shredded
  • 1 ear Corn, Cooked, Husks And Silks Removed, Kernels Cut Off Cob
  • 1 cup Cherry Tomatoes, Quartered
  • 1 whole Avocado, Peeled, Pitted, And Diced
  • ½ cups Green Onion, (green Part Only) Sliced
  • ½ cups Dry Roasted Almonds, Very Roughly Chopped
  • 4 whole Medjool Dates, Pitted And Thinly Sliced
  • 2 ounces, weight Goat Cheese

Preparation

1. Whisk together the salad dressing ingredients in a bowl.
2. Put the lettuce and cabbage in a large bowl and dress it with ¼ cup of the vinaigrette. Divide it between four serving dishes.
3. Add 2 ounces of chicken to each salad.
4. Distribute the corn, cherry tomatoes, avocado, green onion, almonds and dates evenly between the plates.
5. Top with the goat cheese and serve with additional vinaigrette to taste.

This is just one of those times I’m going to give something a ridiculous name. I hope you trust me and make the recipe and then ask for forgiveness later. Sorry! But honestly, the restaurant that inspired this particular salad named it after the street it’s located on, so, apparently they were at a loss too. The lovely little gem I’m speaking of is Northstar Café in Columbus, Ohio.
