Description

A fantastically simple, flavorful salad that is light and perfect any time of the year! Serve as a side or a main – either way, yum!

Ingredients

  • 1 whole Yellow Bell Pepper
  • 3 whole Spring Onions, Finely Diced
  • 2 cups Wild Rocket (arugula)
  • 4 cups Mixed Salad Greens (butter Lettuce, Basil, Etc.)
  • 12 whole Cherry Tomatoes, Sliced In Half
  • 16 whole Seedless Red Grapes
  • ¼ cups Extra Virgin Olive Oil
  • ½ whole Lime Or Lemon Juice
  • Ground Black Pepper To Taste
  • ¼ cups Finely Grated Pecorino Romano
  • ½ cups Drunken Pecorino Cheese
  • 6 slices Parma Ham

Preparation

Rinse all veggies. Throw wild rocket and salad greens into salad bowl and mix together.

Take parma ham out of the package and place on a paper towel lined plate. Cook in microwave for about 1 minute to cook through.

Meanwhile, cut bell pepper into thin strips. Finely dice spring onions. Slice tomatoes in half, if desired. Throw into salad mix along with grapes. Toss together.

Remove parma ham from microwave and cook in a non-stick skillet over low heat to crisp up. Mash parma ham into little bits, like bacon bits, once fully cooked.

Before adding parma ham, lightly drizzle salad with olive oil. Toss. Squeeze 1/2 of a lime or lemon over it and toss again. Sprinkle generously with freshly ground pepper and toss again. Grate pecorino onto salad and do strips of drunken pecorino* with a carrot peeler in the salad. A little goes a long way!

Finally, top with the parma ham and enjoy!

*Drunken pecorino cheese is a special type of pecorino sold at Woolworth’s in South Africa. The rind is clearly soaked in red wine and the cheese is incredibly strong tasting – nothing mild about it! If you cannot find drunken pecorino, simply replace with regular pecorino shavings – they’ll do just as great!
