Description

Luckily, my brother, a talented professional chef, allowed me to publish his vegan caesar dressing recipe. Ready in 10 minutes, and I must admit, it’s rather awesome!

Ingredients

  • 1  Serving Of Your Favorite Salad
  • 2 slices Ciabatta, Baguette Or A Nice Whole Grain Bread
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic, Chopped
  • FOR THE DRESSING:
  • 3 tablespoons, 1 teaspoon, 2-⅓ pinches Soy Or Almond Milk (or Use Your Favourite Vegan Milk)
  • 2 Tablespoons Olive Oil
  • 2 teaspoons Vinegar
  • 1 teaspoon Mustard
  • 1 teaspoon Tomato Paste
  • ½ teaspoons Garlic Powder (or 1 More Chopped Clove Of Garlic)
  • Salt And Pepper, to taste

Preparation

Prep salad ingredients (you can use shredded lettuce, chopped tomatoes, grated carrots, etc.) and put it in a large bowl.

Chop bread into small squares. Heat a pan and throw in the bread (without oil) and cook over high heat for a couple of minute. You want the bread to start crisping up.

While that’s happening, add all the dressing ingredients to another bowl and mix well.

When the bread has started to get crispy, add olive oil and garlic to the pan. Fry for another couple of minutes, but don’t let it burn. Turn the heat down if necessary.

Pour the dressing into the salad bowl and toss well, ensuring all the salad gets coated. When the croutons are ready, layer half of them over the bottom of your dish. Add the salad and finish with the rest of the croutons on top. Done!
