Description

This salad is quick and easy as well as healthy- and of course it’s buonissimo! It’s a guilt-free trip to Tuscany!

Ingredients

  • 2 cans Cannellini (White Kidney) Beans, Drained And Rinsed
  • ½ pounds Fresh Cherry Or Grape Tomatoes, Halved
  • 3 stalks Fresh Scallions, Chopped
  • 2 ounces, weight Crumbled Feta Cheese
  • 1 Tablespoon Fresh Squeezed Lemon Juice
  • 2 Tablespoons Extra Virgin Olive Oil
  • Salt And Pepper, to taste
  • 2 sprigs (or So) Fresh Basil

Preparation

Toss together the cannellini beans, tomatoes, scallions and feta cheese in a nice serving bowl.

Drizzle the lemon juice and the oil over the beans. Add salt and pepper to taste. Roughly chop the basil and add.

Toss the salad again and garnish with more basil.

Made this for dinner tonight. It was delicious! I didn’t have any fresh tomatoes or basil cause they are a bit of a luxury here in Korea. I used drained, canned diced tomatoes and dried basil. Can’t wait to try it with fresh when I get back to the States.
