Description

After the traditional holiday turkey stuffing (and I’m referring to the amount of food I consume, not the kind that you make), I usually don’t want to see any sort of heavy food for the next week or two while I recover. But what to do with the leftover turkey? This is one of my favorite creations, because it’s light and easy. And oh yeah, did I mention delicious?

Ingredients

  • 2 cups Chopped Cooked Turkey
  • ½ Tablespoons Honey
  • 2 Tablespoons Dijon Mustard
  • ¼ teaspoons Black Pepper
  • ¼ cups Miracle Whip
  • ½ cups Craisins Or Dried Cranberries
  • 3 Tablespoons Chopped Fresh Parsley
  • ½ cups Finely Chopped Walnuts
  • ¼ cups Chopped Granny Smith Or Other Tart Apple
  • Baby Spinach, To Serve
  • Feta Or Mozzarella Cheese (optional)

Preparation

Combine all ingredients except cheese and spinach in a mixing bowl. Serve over baby spinach and sprinkle with cheese as desired. Easy!
