Description

Just like the sandwich with a couple extras!

Ingredients

  • 4 slices Bacon, Chopped
  • 2 teaspoons Seasoning Salt
  • 1 pound Turkey Cutlets
  • 1 head Romaine Lettuce, Chopped
  • 2 cups Mixed Greens, Chopped
  • 2 whole Tomatoes, Large Chop
  • 3 whole Scallions, Chopped
  • 2 ounces, fluid Bleu Cheese Crumbles
  • ⅓ cups Cheddar Cheese, Shredded
  • 1 whole Avocado, Large Chop
  • 1 cup Croutons (Optional)
  • Your Favorite Dressing, To Serve

Preparation

In a large skillet, crips up some bacon on medium heat, 5 minutes or so. Remove the bacon to a paper towel-lined plate.

Sprinkle seasoning salt over the turkey cutlets on one side and place in the same skillet, seasoned side down. Sprinkle seasoning salt on the upturned side. Brown the cutlets in the bacon grease (no need for any extra oil or butter) for 4-5 minutes per side, until cooked through.

Meanwhile chop your veggies and get them into a large bowl. Mix together. Top with both cheeses, the bacon bits, the avocado, and croutons if you are using.

When the turkey cutlets are cooked, slice thinly and serve alongside the salad (or on top, or mixed in, whichever way you like it)!

Serve with your favorite dressing—ranch, caesar, and vinaigrettes all are tasty!
