Description

Inspired by recreating a neighbor’s “secret” recipe, I have achieved a close facsimile. This transforms plain tuna into special tuna salad.

Ingredients

  • 3 cans 6 Oz. Each, Solid White Tuna, Drained And Flaked With A Fork
  • 1 whole Carrot, Shredded
  • 3 whole Scallions, Finely Sliced
  • 2 stalks Celery, Diced
  • ½ whole Lemon, Juiced
  • ¼ cups Good Quality Mayonnaise, More Or Less To Taste
  • 1 Tablespoon Dijon Mustard
  • ¼ cups Sweet Pickle Relish

Preparation

Drain the cans of tuna and flake with a fork. Mix in the carrot, scallions, and celery.

Make the dressing with the remaining ingredients – lemon juice, mayonnaise, Dijon mustard, and pickle relish.

Pour dressing over the tuna and vegetables and mix well.

Refrigerate until ready to serve on a bed of lettuce as a nice salad or between bread as a sandwich.

Great taste, have done it several times and occasionally substituted ingredients, i.e. water chestnuts for celery, diced pickles when here was no relish.
