Description

Delicious whether served warm or cool.

Ingredients

  • 8 ounces, weight Elbow Macaroni
  • 3 whole Hard Boiled Eggs, Chopped
  • 1 cup Sweet Pickles, Chopped
  • 12 ounces, weight Can Albacore Tuna, Drained And Flaked
  • ½ cups Celery, Chopped
  • ½ cups Onion, Chopped
  • ½ cups Miracle Whip Or Mayonnaise
  • 1 Tablespoon Prepared Mustard
  • 2 Tablespoons Sweet Pickle Juice
  • 8 leaves Lettuce, Optional
  • 16 slices (wedges) Tomatoes (optional)
  • Fresh Parsley (optional)

Preparation

Cook macaroni according to package directions.

Boil three eggs, peel and chop.

Drain macaroni, rinse with cold water; drain.

Combine macaroni with boiled eggs, pickles, tuna, celery and onion. Toss gently.

Combine Miracle Whip, mustard and pickle juice. Mix well. Pour over the macaroni mixture and toss gently. Cover and chill for at least one hour.

Serve on lettuce leaves; garnish with tomato wedges and parsley, if desired.

Note: this is also good served warm with a green salad as a side. In fact, our family prefers it warm.
