Description

Salmon served with mango, avocado and spinach.

Ingredients

  • 2 pieces Salmon Fillets
  • 1 whole Mango
  • 1 whole Avocado, Halved
  • 1 bag (6 Oz. Bag) Spinach
  • ¼ cups Red Onion
  • ¼ cups Lemon Juice
  • 3 Tablespoons Honey, Divided
  • ⅛ cups Extra Virgin Olive Oil
  • 1 Tablespoon Plain Rice Vinegar
  • 1 teaspoon Ground Ginger
  • 1 Tablespoon Ground Red Pepper

Preparation

First, rinse the salmon under cold water. Pat dry. Spray PAM on foil and place on a cookie sheet. Add the salmon (if there is skin, place skin side down). Liberally coat each piece of salmon with 2 tablespoons honey, evenly add ginger and ground red pepper. Season with salt and pepper. Bake at 350 degrees for about 15-20 minutes, depending on the size.

For the dressing:

While the salmon is cooking, in a blender, add half of the chopped mango, remaining 1 tablespoon of honey, all the lemon juice, rice vinegar and sprinkle with salt and pepper. Blend until pureed. Now stream in olive oil, mix well. Add more salt and pepper as needed for taste.

Plate the spinach, chopped onion, avocado and the remaining chopped mango. Add the salmon and top with 1-2 tablespoons of the dressing. Start with less and add more as needed. Enjoy!
