Description

There is just nothing like a fresh tomato, basil and mozzarella salad on a hot summer day. Nothing, I tell you!

Ingredients

  • 6 whole Tomatoes, Fresh From The Garden Are Best Of Course, Coarse Chopped
  • ½ pounds Fresh Mozzarella, Cut Into Chunks
  • 15 whole Fresh Basil Leaves, Sliced In Thin Long Strips, Otherwise Known As A Chiffonade
  • 3 Tablespoons Dates, Finely Chopped - I Use Sunsweet
  • 3 Tablespoons Balsamic Vinegar

Preparation

Now I know it may sound weird adding dates to this salad but they actually accentuate the flavor of the balsamic vinegar, thus making the salad even more delicious! If you aren’t a fan of dates feel free to leave them out, but I promise you they really are good in here!

Add tomatoes, fresh mozzarella, basil leaves and dates into a salad bowl. Drizzle balsamic vinegar over the salad, toss and serve.

For a fancier look:

Slice the tomatoes into 1/4 inch thickness. Drain cheese of any excess water and slice into 1/4-inch slices. Set aside.

Chiffonade basil. Arrange the tomato and cheese slices on a platter so they overlap each other. Drizzle with balsamic vinegar. Top with the basil and dates.

Please note: you can also drizzle a bit of extra virgin olive oil over the salad if you like. It’ll taste good either way!
