Description

My version of Mandy’s The ‘Fave’ Green Salad. Veggie packed and full of flavour. It’s loaded with good, healthy stuff (broccoli, avocado, almonds) and satisfyingly crunchy. I could eat this all day, everyday. Portion-wise, this is perfect for one (hungry salad loving human) or two if serving as a side dish.

Ingredients

  • FOR THE SALAD:
  • 1 cup Chopped Romaine Lettuce (washed)
  • 1 cup Watercress (washed)
  • 1 cup Small Broccoli Florets (torn Or Chopped Into Small Bites)
  • ½  An Avocado (pitted And Chopped Into Bites)
  • 1 Tablespoon Fresh Basil, Finely Chopped
  • 1 Tablespoon Roasted Slivered Almonds (unsalted)
  • ¼ cups Crushed Pita Chips (Stacey's Multigrain)
  • 2 Tablespoons Parmesan Reggiano (shavings Or Grated)
  • FOR THE DRESSING:
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Mayonnaise
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Liquid Honey
  • 1 teaspoon Water (just Enough To Thin Out The Dressing)
  • Salt And Pepper, to taste

Preparation

In a large mixing bowl, toss salad ingredients.

In a small Mason jar, combine salad ingredients. Shake until smooth.

Pour dressing over salad and toss until well-coated. Enjoy!
