Description

One of my favorite sides for Thanksgiving, so good with ham or turkey.

Ingredients

  • 16 ounces, weight Macaroni, Cooked And Drained
  • 1 whole Green Pepper, Diced
  • 1 whole Purple (red) Onion, Diced
  • 3 stalks Celery, Diced
  • 1 whole Carrot Shredded Or Diced
  • 2 cups Mayonnaise (not Miracle Whip!)
  • 8 ounces, weight Shredded Cheddar Cheese
  • 1 can (14 Oz. Can) Sweetened Condensed Milk
  • ½ cups White Vinegar
  • ⅓ cups Sugar
  • ¼ teaspoons Pepper

Preparation

In a large bowl, mix cooked and drained macaroni with vegetables. Stir in mayonnaise until well combined, add cheese and mix well. Set aside.

In a small sauce pan, combine condensed milk, white vinegar, sugar and pepper and heat, stirring frequently until sauce is heated through and just starts to bubble. Pour over salad, stirring until well combined. Cover and refrigerate for at least four hours.

Have made this a handful of times now and its fabulous! I am picky about macaroni salad but this one has it all! I never use the sugar…not sure the importance of it as it is already sooo sweet, but it turns out great! Oh and my sis-in-law now makes this recipe only and is crazy about it! Thanks for sharing missinthekitchen!

This salad was great!! I made it over the July 4th weekend and took it to my parents house for our celebration dinner, and everyone raved about it. I was a bit worried about the sweetness level so I omitted the 1/3 c. sugar. It was still rather sweet so I think when I make it tonight (yes, I’m making it again!) I will even cut back on the amount of s.c.m. too! Thanks for the yummy recipe!

I made this for Easter. Everyone loved it. It had just that right amount of mayo and was not overly sweet. I would recomend making it a day in advance, the second day it was even better. This will be my go to macaroni salad for now on.
