Ingredients
- 2 cans (15 Oz. Size) Black-Eyed Peas, Drained And Rinsed
- 1 can (15 Oz. Size) Corn, Drained And Rinsed
- 1 whole Tomato, Roughly Chopped
- 2 whole Green Onions, Finely Chopped
- 2 whole Jalapeños, Finely Chopped
- ¼ cups Chopped Fresh Cilantro
- 2 Tablespoons Olive Oil
- 2 Tablespoons Red Wine Vinegar
- ½ whole Lime, Juiced
- ½ teaspoons Ground Cumin
- 3 pinches Ground Cayenne Pepper
- 1 teaspoon Salt
- ½ teaspoons Ground Black Pepper
Preparation Instructions
Combine all ingredients in a large bowl. Stir and chill for several hours or overnight.
Serve cold on its own, with chips, on a salad, or any other way you want!
