Description

This Supergreens Salad with Cherries and Feta will become your new favorite salad. It’s super easy to whip up for weekday healthy lunches and delicious enough to take to your next cookout.

Ingredients

  • 4 cups Supergreens (baby Spinach And Baby Kale)
  • 1 cup Almonds
  • 1 cup Cherries, Pitted And Halved
  • ¼ cups Feta
  • FOR THE DRESSING:
  • 3 Tablespoons Grapeseed Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Honey
  • Salt And Pepper, to taste

Preparation

Toss all salad ingredients in a large bowl.

Mix all dressing ingredients in a jar and shake. Add salt and pepper to taste. Dress salad right before serving.

What a great salad. I made this last night for dinner and it was so good that there wasn’t even a lettuce leaf left in the bowl! I used a mesclun mix that had spinach and kale in it instead of straight spinach and kale because I have a few family members that aren’t big kale fans. I also used cherry balsamic vinegar instead of red wine vinegar because my family loves cherries. my vinegar is on the sweet side so I skipped the honey. It was so delicious. I had no idea that cherries and feta liked each other so much! My family has requested that I make this salad again within the next couple of days. It’s that good. Thanks for a great recipe. I’ll be making this recipe every year during fresh cherry season!
