Description

I cannot take credit for this recipe. I got this recipe from another website but made a couple of alterations. I doubled the sun-dried tomatoes and added some fresh lemon juice.

Ingredients

  • 2 cups Uncooked Orzo Pasta
  • ½ cups Chopped Fresh Basil Leaves
  • ⅓ cups Chopped Oil-packed Sun-dried Tomatoes
  • 2 Tablespoons Olive Oil (I Used The Oil In The Sun-dried Tomato Jar)
  • ¾ cups Grated Parmesan Cheese
  • ½ teaspoons Salt
  • ½ teaspoons Ground Black Pepper
  • Fresh Lemon Juice, As Much As You'd Like To Taste

Preparation

1. Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente. Drain and set aside.

2. Place basil leaves and sun-dried tomatoes in a food processor. Pulse 4 or 5 times until blended.

3. In a large bowl, toss together the orzo, basil-tomato mixture, olive oil, parmesan cheese, salt and pepper and lemon juice.

Serve warm or chilled.

I made this for a bridal luncheon and the women were drooling over it! The smells of the sun dried tomatoes, basil, and parmesan cheese are delicious!

This is a great salad. My husband had trout and I had chicken on the grill…great with both! It was very fresh and light…tho I did do more sun-dried tomatoes and basil as I like both to be dominant in the meal! Topped with fresh parmesan cheese…nummy! Will definitely make again!

I didn’t have orzo so used penne to make a pasta salad and it was wonderful. I doubled the tomatoes because I love them.

I made this for a church BBQ. I personally am not a fan of pasta salads but my husband loved it. I came home with quite a bit of it which is why it only gets 4 stars. I usually come home from potlucks with no leftovers. Luckily my husband gladly ate the leftovers.
