Description

An easy and refreshing salad that I enjoyed at one of my favorite hometown restaurants and re-created at home.

All measurements are approximate. Add more or less (or omit altogether) as your own tastes dictate.

Ingredients

  • 2 cups Fresh Baby Spinach
  • ½ quarts Fresh Strawberries, Hulled & Quartered
  • 2 Tablespoons Goat Cheese
  • 2 Tablespoons Slivered Almonds
  • 4 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Orange Juice
  • 1 teaspoon Orange Zest
  • 1 Tablespoon White Wine Vinegar
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Fresh Ground Black Pepper

Preparation

Toast almonds in a pan over medium low heat until lightly browned and set aside.

Add orange juice, zest, white wine vinegar, salt, and pepper in a bowl and whisk. Pour olive oil in while whisking until dressing is mixed.

Mix spinach, strawberries and almonds in a separate bowl (or serve on a plate) and toss with the dressing. Top with crumbled goat cheese and serve.

Oh my gosh. I made this last night for supper…that salad is good! No left overs. Salads have never disappeared that fast in the house. I made it with spinach that I had picked from the garden just hours before making the salad.
