Description

A wonderful potato salad, perfect for a picnic, grill, or even Father’s Day! Summer-ready!

Ingredients

  • 3 pounds Red Potatoes
  • 6 whole Stips Of Turkey Bacon (or Regular), Cooked, Divided
  • 12 ounces, weight Sour Cream
  • 5 whole Green Onions, Chopped
  • 2 cups Cheddar Cheese, divided
  • ¼ cups Low-fat Mayonnaise
  • 1 teaspoon Olive Oil
  • Salt And Pepper

Preparation

For a crisper skin on the potatoes, brush with olive oil and then bake until slightly soft (but sliceable) when you put a fork to it, about 20 minutes. Or you can just boil them, but the skin is harder to keep on the potatoes.

Let potatoes cool then cut them into small bite-sized pieces.

In a large bowl gently fold in all the ingredients, saving one bacon strip and ¼ cup of the cheese to garnish on top.

Refrigerate with a lid or Saran wrap till chilled. Enjoy!

I’ve made this a few times now for dinner for the hubby and me…he loves it! Delicious with a big steak :) And it’s a cinch to throw together. I like it best as leftovers the next day and/or refrigerated overnight.

I made this for a BBQ and it was a huge hit. Made again for a church get together, once again, huge hit. Now I am preparing it for a baby shower since the Mom-to-be has requested it. :)

I made this for Father’s day, and everyone raved about how great it was — especially because it doesn’t taste like a mayo-based potato salad. I boiled the potatoes a day early (because I didn’t pay attention to the recipe where it says to bake the potatoes) and it turned out just fine! Next time, I will try the “real” way. Thanks for this great one!
