Description

The title of this recipe lists the only four ingredients in the salad. The 5th ingredient is the dressing, and it is made with only 4 ingredients, as well, not counting the oil and seasoning, which I always have on hand.

Feel free to add more or less of each ingredient to your taste!

Ingredients

  • FOR THE SALAD:
  • 1 cup Spinach Leaves
  • 5 whole Small Or Medium Strawberries, Tops Removed, Sliced
  • 2 Tablespoons Slivered Almonds, Toasted
  • 2 Tablespoons Crumbled Feta
  • FOR THE DRESSING:
  • 2 whole Large Limes, Juiced
  • ½ cups Fresh Parsley Leaves, Packed
  • 1 Tablespoon Honey, Slightly Heaping
  • 1 clove (medium) Garlic, Peeled And Roughly Chopped
  • ½ teaspoons Kosher Salt, Plus More To Taste If Needed
  • 6 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Water, Or More To Get The Consistency Right

Preparation

For the salad:
Place the desired amount of spinach on the serving plate. Top with strawberries, toasted almonds, crumbled feta and drizzle on some honey lime dressing. Serve with more dressing on the side.

For the dressing:
Add lime juice, parsley, honey, garlic and salt to a food processor. Pulse 10 times and then mix on high speed for 15 seconds. Scrape the bottom and sides of the processor with a rubber spatula. Mix on high for 15 seconds more. Scrape the bottom and sides again.

With the processor on low speed, drizzle in olive oil in a slow, steady stream. Scrape the bottom and sides again. Mix 30 seconds more.

Add the water a teaspoon or two at a time until you get the consistency you’re looking for in your dressing. Transfer the dressing to an airtight container and store in the fridge for up to 1 week. Makes enough dressing for 8 servings of salad.

Note: Make this a main dish salad by adding grilled chicken! A healthy dinner option.
