Strawberry Goat Cheese Salad with Apricots & Pecans

Recipe Description
A fresh and colorful salad that is simple enough to throw together for a quick lunch, and elegant enough to serve at your next dinner party.
Preparation Instructions
Top salad greens with strawberries, apricots, pecans, and crumbled goat cheese. Drizzle with olive oil and vinegar. Sprinkle with salt and pepper to taste.
If you are not a goat cheese fan, you could always substitute feta!
Ingredients
- 8 cups Mixed Salad Greens
- 2 cups Strawberries, Sliced
- 4 whole Apricots, Pitted And Sliced
- 1 cup Pecans
- ¼ cups Goat Cheese Crumbled
- ¼ cups Olive Oil
- ¼ cups Balsamic Vinegar
- ½ teaspoons Salt
- ¼ teaspoons Pepper
