Description

Full of fresh berries, creamy feta and nutty toasted almonds with an easy homemade balsamic vinaigrette, this salad is sure to bring the spring season into your kitchen. Thrown together in just 10 minutes, it makes for a perfect side to a meal or add some grilled chicken and you’ve got a quick, easy and delicious main dish!

Ingredients

  • 14 ounces, weight Mixed Baby Spring Greens
  • 8 ounces, weight Strawberries, Cored And Sliced Thin
  • 8 ounces, weight Blackberries
  • ½ cups Gold Raisins
  • ½ cups Extra Virgin Olive Oil
  • 3 Tablespoons Balsamic Vinegar
  • ½ teaspoons Dijon Mustard
  • 1 dash Salt And Pepper
  • ½ cups Sliced Almonds, Lightly Toasted
  • ½ cups Feta, Crumbled

Preparation

1. In a large mixing bowl, toss to combine the mixed greens, strawberries, blackberries and raisins. Set aside.
2. Make the dressing: In a small mixing bowl, add olive oil, balsamic vinegar, mustard, salt and pepper and whisk vigorously until completely combined.
3. Pour about half of the dressing over the salad mixture and toss to combine.
4. Sprinkle almonds and feta on top and drizzle with the rest of the dressing. Serve immediately.
