Description

Not your mama’s green salad! A spin off of a salad I had at the South Fork Lodge on the South Fork of the Snake River. I’ve been dreaming of it ever since! Spinach, leeks, feta, roasted almonds and smoked salmon.

Ingredients

  • ½ cups Almonds, Roasted And Chopped
  • 1 bag (6 Oz.) Baby Spinach
  • 1 bulb Leek, Sliced (tough Green Parts Removed)
  • 2 Tablespoons Feta Cheese, Crumbled
  • Your Favorite Dressing, To Taste
  • 4 ounces, weight Smoked Salmon

Preparation

Roast the almonds in a 350-degree oven for about 10 minutes. It adds so much smoky flavor to the nuts!

Toss the spinach, leeks, feta, almonds and your favorite salad dressing in a bowl. I used a champagne vinaigrette. Top with the salmon and serve. Dream about it nightly.
