Description

A light, refreshing salad that you may be able to convince even the pickiest of eaters to enjoy. Trust me, I am one of those people! Also, you could add a skewer of grilled shrimp to make it more of a main meal!

Ingredients

  • 20 whole Shrimp, Peeled And Deviened (optional)
  • Salt And Pepper
  • 1 pound Baby Spinach
  • 8 whole Strawberries, Stemmed And Sliced
  • 2 whole Tangerines, Peeled And Divided Into Sections
  • 1 cup Feta OR Goat Cheese, Whichever You Prefer
  • ½ cups Walnuts (optional)
  • Your Favorite Raspberry Vinaigrette

Preparation

If you are opting for shrimp, place 5 on each skewer (wood or metal is fine, but don’t forget to soak wooden ones in water for about half an hour prior to cooking) and sprinkle with salt and pepper. You could grill these or cook them in a frying pan—whatever works for you! But they won’t take long, about 2-3 minutes on each side, or until pink.

Meanwhile, divide your (clean) spinach onto your plates.

Scatter the sliced strawberries and tangerine sections over the top of each.

Sprinkle the cheese and walnuts on top of that. Slide the shrimp from one skewer each onto your salads. Drizzle the desired amount of dressing on your salad, and serve immediately. Enjoy!
