Description

Soba noodles with a spicy nectarine slaw. A salad with heft. Equal parts crunchy, tangy, spicy and downright delicious. The perfect accompaniment to a hot summer day.

Ingredients

  • FOR THE SALAD:
  • 3 whole Boneless, Skinless Chicken Breasts
  • 1 bag (8 Oz. Size) Soba Noodles
  • 1 Tablespoon Sesame Oil
  • 1 head White Cabbage (savoy), Cored And Finely Chopped
  • 1-½ cup Shredded Carrots
  • 1 whole Cucumber, Cut Into Matchsticks
  • 2  Nectarines, Chopped
  • ½ cups Cilantro, Chopped
  • ½ cups Scallions, Green And White Parts Diced
  • FOR THE DRESSING:
  • 2 cloves Garlic, Minced
  • 2  Thai Chile, Finely Minced
  • 1 teaspoon Ginger (freshly Grated)
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Apple Cider Vinegar
  • 1 teaspoon Agave Or Honey
  • 1  Lime, Juiced
  • 1 Tablespoon Sesame Oil
  • ¼ cups Almond Butter
  • ¼ cups Water

Preparation

1. Preheat oven to 350 F. Put chicken into a baking dish. Bake chicken breast for 20 minutes or until cooked through. Remove from oven, allow it to cool and shred.
2. Boil a pot of water. Cook soba noodles as directed on the package. Drain and toss with a drizzle of sesame oil. Set aside.
3. While chicken is baking: prep cabbage, carrots, cucumber, nectarines, cilantro, and scallions and place them in a large bowl. Refrigerate until everything is ready.
3. Place garlic and chile peppers in a medium sized bowl. Combine remainder of dressing ingredients in the same bowl and whisk until smooth. You may find that this is more dressing than needed.
4. Combine soba noodles with veggies and chicken and mix until incorporated. Dress salad individually before serving.
