Description

Cool linguine with a lovely peanut dressing flavored with peanut, soy, and cilantro. Tossed in plenty of chopped cilantro and sliced green onions. All the wonderful things in life.

Ingredients

  • 1-½ pound Linguine
  • 1 bunch Cilantro, Roughly Chopped
  • 4 whole Green Onions, Thinly Sliced
  • _____
  • PEANUT DRESSING:
  • 5 cloves Garlic, Peeled
  • 1 cup Chunky Peanut Butter
  • ¾ cups Low Sodium Soy Sauce
  • 4 Tablespoons (to 5 Tablespoons) Red Wine Vinegar
  • 6 Tablespoons Brown Sugar
  • 3 Tablespoons (to 4 Tablespoons) Red Chile Oil
  • ¼ cups Olive Oil
  • ¼ cups Sesame Oil (can Also Use 1/2 Cup Olive Oil)
  • 1 Tablespoon (to 2 Tablespoons) Toasted Sesame Oil (sold In The Asian Aisle)

Preparation

Boil linguine. Drain and set aside. Keep cool or at room temperature.

Make the dressing: in a blender or food processor, add garlic, peanut butter, soy sauce, red wine vinegar, and brown sugar. Pulse until smooth. Add chili oil and pulse again until smooth.

With the food processor on, pour in other oils until mixture is smooth and pourable. Thin with water to get desired consistency if necessary. Chill dressing until ready to use.

To assemble the salad, combine linguine, dressing, cilantro, and green onions. Toss to combine. Add dressing gradually and toss until the noodles are sufficiently coated. Toss with more cilantro for a garnish.

So I had something like this at a restaurant recently except it also included cucumber, carrots, chicken, and mango. It was divine, and I’m going to use this as my base to try to recreate it. I don’t know that it needs the chicken, but I do highly recommend the mango. It was unexpected but oh so good!

YUM! I forgot to buy cilantro so I went ahead w/o it & it was still yummy. Even my picky ones liked it.

I’ve added, on occasion, grated carrot and thin-sliced BBQ pork to this recipe for extra awesomeness. My teenaged son vacuums this up! What I love is that I can make a large batch on Sunday, and eat off it for 3 or 4 days in lunches. A summer favorite!

I made this for a family gathering and it was a big hit! I added mango slices and extra lime juice per others have suggested. Everyone loved it.

This was awesome! We have a great Chinese takeout place about 30 minutes away that makes great Cold Noodle with Sesame. Since it’s a bit of a drive as far as takeout goes, I’m always on the lookout for a recipe that I can make at home and this is it! I used rice vinegar instead of red wine vinegar and added the juice of 1 lime. My family loved it and I’m sure that I’ll be making it several more times this summer, especially when it’s really hot. Thanks for the great recipe Ree. You’ve done it again!

Holy Toledo, this is seriously yummy! I mean I am not sharing this with anyone. I added cucumber and carrots to this, and, and, well it’s just amazing!
