Get to know quinoa. It can be your friend during these hot summer months!
1. Rinse the uncooked quinoa in a fine mesh strainer (to wash away the bitter, powdery outsides). Place in a pot with the water. Bring to a boil, cover, and reduce to a simmer. Let cook for 15 minutes.
2. Meanwhile, dice the avocado and orange. Mince the jalapeno and cilantro, then add with the avocado and orange. Season with a pinch of salt and pepper.
3. Carefully fold in the avocado and orange mixture to the cooked quinoa. Sprinkle with a bit more cilantro and add a dollop of sour cream. Eat with tortillas.
I get a similar barbacoa salad every time I go to Cafe Rio. This is such an easy summer salad! I buy premade cilantro dressing (I like the El Torrito brand)and use pre-cooked carnitas. A healthy summer dinner in ten minutes!
