Description

A kicked up slaw that you’ll want to try! Fresh, colorful, and full of crunch!

Ingredients

  • 1 cup Chipotle Or Spicy Ranch Dressing
  • 2 Tablespoons Mayonnaise
  • 2 teaspoons Apple Cider Vinegar
  • 1 pinch Fresh Ground Pepper
  • 1 bag (about 12 To 14 Oz. Size) Shredded Cole Slaw Mix
  • 2 whole Carrots, Shredded
  • 1 whole Red Bell Pepper, Sliced Very Thin And Cut Small
  • 2 whole Green Onions, Sliced
  • 2 ears Grilled Corn, Kernels Cut Off
  • 1 bunch Fresh Cilantro, Chopped

Preparation

In a large bowl combine ranch dressing, mayo, vinegar and black pepper. Taste for seasoning. Add vegetables (minus cilantro) and toss until fully dressed. Refrigerate for 2 hours or until chilled. Toss in cilantro right before serving.

Like “bars” I used raw corn (actually I prefer raw corn in my summer salads. I couldn’t find “chipotle ranch” so I put three chipotle peppers in a blender with 2/3 c of ranch and 1/3c mayo for the dressing.

The combination of flavors in the salad was super yummy!

Made this for my husband and myself last night. We both liked it very much. It has good flavor. The corn was my favorite part but I used raw corn since I didn’t have time to grill it first.
