Southwest Farro Salad with Lime Vinaigrette

A delicious and flavorful salad that comes together easily.
Ingredients
- FOR THE SALAD:
- 2 cups Cooked Italian Farro, Chilled
- 1 can (15 Oz. Size) Low-sodium Black Beans
- 1 whole Mango, Peeled And Diced
- 1 whole Tomato, Diced
- ¼ cups Cilantro, Chopped
- 1 whole Avocado, diced
- Salt And Pepper, to taste
- FOR THE VINAIGRETTE:
- 1 whole Lime, Zest And Juice
- ¼ cups Chipotle Olive Oil
- 1 teaspoon Cumin
- Salt To Taste
Preparation
Mix together all the salad ingredients. Next whisk together the ingredients for the vinaigrette. Drizzle the vinaigrette over the salad and toss to combine. Serve alongside chicken or fish.
